How Did Smoodi Go from Harvard Innovation Labs to 300+ Locations?
Smoodi was founded at Harvard Innovation Labs to solve a simple problem: making genuinely healthy beverages accessible in commercial settings. Today, Smoodi operates in 300+ locations across the United States and has served more than 2 million smoothies.
Every commercial smoothie machine on the market exists to solve a version of the same problem: how do you give people access to fresh, healthy beverages without the labor, waste, and complexity of a traditional smoothie bar? Smoodi started answering that question at the Harvard Innovation Labs, where the founding team identified a gap that existing solutions were not filling. Healthy beverages were either expensive and labor-intensive (staffed juice bars) or convenient but nutritionally compromised (vending machines and pre-bottled drinks). The goal was to build something that delivered genuinely healthy smoothies, from real fruit, with no syrups or concentrates, in a format that required zero dedicated staff.
Today, Smoodi operates in more than 300 locations across the United States and has served over 2 million smoothies. The company distributes its IQF (individually quick frozen) fruit cups through Dot Foods, the largest foodservice redistribution company in the US. The machines are installed in universities, hospitals, corporate offices, gyms, hotels, airports, convenience stores, and dozens of other commercial environments. This is the story of how that happened.
The Problem That Started It All
The founding team at Harvard Innovation Labs observed a consistent pattern across commercial foodservice environments. Facility managers, dining directors, and wellness coordinators all wanted to offer fresh, healthy beverage options to their customers, employees, students, or patients. But the available options came with significant operational tradeoffs.
A staffed smoothie bar requires dedicated labor, fresh ingredient procurement, cold storage, cleaning protocols, and ongoing training. For most facilities, especially those already managing complex operations with limited staff, adding a smoothie bar meant adding headcount and complexity. The alternative, pre-bottled smoothies in a refrigerated case, solved the labor problem but sacrificed freshness, ingredient quality, and customer experience.
Smoodi was designed to eliminate this tradeoff entirely. The machine blends each smoothie fresh, from real frozen fruit, in under 60 seconds. It self-cleans between every use. It requires no dedicated staff to operate. And it fits in approximately 40 inches of floor space, making it viable for locations where a traditional smoothie bar would never fit.
The Technology Behind the Machine
Smoodi's automated smoothie machine is compact and self-contained. It connects to a standard 120 VAC / 7A outlet (NEMA 5-15P with integrated GFCI), a water inlet, a sanitizer inlet, and a drain. The installation requirements are straightforward: three-eighths-inch push-to-connect water supply at 50 to 80 PSI (filtered, soft, potable), a quarter-inch push-to-connect sanitizer line, and a 1-inch FNPT drain with half-inch slope per 12 inches to an open drain within 10 feet.
Each smoothie starts with a sealed IQF fruit cup containing pre-portioned real frozen fruit. The customer selects their flavor, the machine loads the cup, adds water, blends for under 60 seconds, and dispenses a fresh smoothie. After dispensing, the machine automatically runs a full cleaning and sanitizing cycle before the next customer can use it. No syrups, concentrates, or artificial ingredients are involved at any stage. Every smoothie is real fruit blended with water only.
The booster bar allows customers to add functional supplements to their smoothie, including protein powder, collagen, and other health-focused options. This customization capability lets operators serve the growing demand for functional beverages without adding ingredient complexity or staff training.
From Innovation Lab to 300+ Locations
Smoodi's growth from the Harvard Innovation Labs to a national footprint followed a path that validated the product across multiple verticals. Early deployments proved the core concept: operators in university dining halls, corporate offices, and healthcare facilities adopted Smoodi because it solved real operational problems. No labor, no waste from perishable ingredients, no complex supply chain for fresh fruit, and no cleaning staff.
In October 2023, Smoodi closed a $5 million funding round to expand its reach. The investment supported geographic expansion, supply chain development, and the partnership with Dot Foods for national distribution. Dot Foods, which works with over 1,530 manufacturers and distributes more than 123,500 products, gave Smoodi operators a familiar ordering channel. Operators can add Smoodi fruit cups to their existing Dot Foods orders without establishing a new vendor relationship.
The IQF fruit cups themselves are a key part of the growth story. With a shelf life of up to two years, the cups eliminate the spoilage and waste issues that plague fresh fruit programs. Operators do not need to worry about expiring inventory, seasonal availability, or cold chain disruptions. They order cups through Dot Foods, store them in a standard freezer, and load them into the machine as needed.
"Campus dining is continuously evolving and as operators we have a rising bar to meet the needs of our guests. We've been able to provide a quality smoothie experience while leaning into a labor-saving technology."
— Dustin Peterson, Director of Retail Operations, Rochester Institute of Technology
Where Smoodi Operates Today
Smoodi's 300+ locations span a wide range of commercial environments. Each vertical has different operational needs, but the core value proposition, fresh smoothies with zero labor, applies across all of them.
- Universities and colleges: dining halls, student unions, recreation centers, and residence halls where students want healthy, convenient options between classes
- Hospitals and healthcare facilities: cafeterias, break rooms, waiting areas, and outpatient lobbies where staff and visitors need quick access to nutritious beverages
- Corporate offices: break rooms, lobbies, and wellness centers where employers use Smoodi as a workplace amenity that supports employee health and retention
- Gyms and fitness centers: lobby areas and locker room exits where members want post-workout nutrition with protein and collagen boosters
- Hotels and resorts: breakfast buffets, lobby areas, and pool decks where guests expect fresh, healthy beverage options
- Airports and travel centers: gate areas and concourses where travelers need healthy grab-and-go options during layovers
- Convenience stores and grocery: retail environments where health-conscious consumers seek fresh alternatives to packaged beverages
The compact footprint makes Smoodi viable in spaces where traditional foodservice equipment would not fit. For high-volume locations, multiple machines can be installed side by side in the same footprint as a single competitor kiosk, with each machine blending simultaneously and independently.
The Numbers Behind the Growth
Several key metrics define Smoodi's current market position:
- 300+ locations across the United States
- More than 2 million smoothies served
- Each smoothie blended in under 60 seconds
- Self-cleaning between every single use
- IQF fruit cups with up to 2-year shelf life
- National distribution through Dot Foods
- Operational lease options starting at $299 per month (48-month term)
- Purchase pricing starting at $14,999
- Approximately 40 inches of floor space required
- Standard 120 VAC / 7A outlet (no special electrical infrastructure)
These numbers reflect a product that has been validated across verticals, at scale, over multiple years. The 2 million smoothie milestone represents not just volume but consistency: each of those smoothies was made from real fruit, blended fresh, in a machine that self-cleaned before and after every use.
What Comes Next
Smoodi continues to expand across existing verticals while entering new markets. The healthcare sector has shown particularly strong demand, driven by hospital food quality mandates and the growing emphasis on staff wellness programs. University dining programs are adopting Smoodi as part of broader dining overhauls that prioritize flexibility, self-service access, and clean-label ingredients.
The functional beverage trend, with consumer demand for protein, collagen, and other supplements at historic highs, aligns directly with Smoodi's booster bar capability. Operators can offer customizable, functional smoothies without adding ingredient complexity, staff training, or menu development. As the functional beverage market grows (projected to reach $220 billion globally by 2026), Smoodi gives operators a practical way to participate.
From the Harvard Innovation Labs to 300+ locations and more than 2 million smoothies served, Smoodi's growth reflects a straightforward principle: operators want to offer genuinely healthy beverages, and they need a solution that does not add labor, waste, or complexity to their operations.
